You can use VGMToolbox to demux the .pss video format.
http://sourceforge.net/projects/vgmtoolbox/files/latest/download

After launching the program to to Misc. Tools->Stream Tools->Video Demultiplexer.
Then choose PlayStation Stream from the drop-down box.

You can then use a program such as VirtualDub to transfer to an .avi container.

(Be sure to also install the plugin pack to be able to open mpeg video streams.)

You may also need an audio converting program such as this one:

Ah, Thank you so much.

The briefing video at the start of the game is called E3DEMO for some odd reason and managed to find two placeholder videos as well. I'll upload them whenever I can find free time from college.
