This member claims they have found access to the game's debug menu, and is willing to share info over PM, if someone wants to bite. Thought I'd share for the curious.
They did share some tidbits earlier:
Unused localization leftovers (main menu is very different in the final build)

Portraits for scrapped playable characters
Unused "Making-of" video with a big "temporary" kanji overlay and mono audio, video removed by youtube
Functional debug rooms
Debug font ressembling that of KH BBS (one member initiated a flame war so that they make it the normal font)
Demo already included inside final game, but not used
Big number of unused models and text
Leftover alternate low-res models from the cancelled mobile version
Unused Summons and enemies:

Typhon, Pandemona, and Nemesis had finished models, Phoenix was an unfinished model.
It also seems at one point Titan was considered but they went for Golem instead.
Summons also had dialogue but it was scrapped. That's right, Ifrit, Odin, GILGAMESH, and the others would actually say a phrase when summoned.
Unused enemies as well such as a Mecha Behemoth.
Lots of cool stuff really.
