Sofi's latest creation in experimenting with green tea pastries, these cookies are entirely dairy-free, substituting soybean oil for butter which was scarce in supply when she baked her first batch. As many components of matcha are fat soluble, this method of consuming Camellia sinensis leaves may actually be preferable to drinking the tea itself. For the best experience, take a bite, sip some milk (soy, dairy or otherwise) and chew thoughtfully as the flavors blend in your mouth. Repeat.
