Short version. Found demo footage. found discs they came from. my computer is not powerful enough to rip them.

We're not all here waiting to investigate things for you; it's great that you're finding things but that doesn't mean everyone else will drop everything to help look into them. Likewise, the fact that you don't have a PC you can record PlayStation video on doesn't mean you can't research it in other ways. Videos aren't the only or even necessarily the best way to document a game: it might be equally or more productive to explore the discs themselves, extracting and comparing textures, etc. Recordings are certainly useful to demonstrate more complex changes such as modifications to gameplay, but plenty of content (text, graphics, audio) is best found by just digging into the subject.

Ultimately, there's no rush here. Those demo discs aren't going anywhere, emulators aren't going anywhere. If nobody does video coverage of the game in the next month, six months, or six years, it won't be the end of the world. We're talking about a game that's over a decade old; there's no such thing as timely any more, it's just a matter of when somebody with the interest, capability and time decides to do the work. For all anyone knows, that might be you at a future date when you have the hardware for it. Or it might be someone else. Either way, a degree of patience is in order.
