I got a wonderful coupon for $25 at a premium butcher shop. They offer a great variety of meats including some exotic ones such as pheasant or venison. This is super-cool because someone very special to me is supposed to visit me in a month and one of the fun things about his visits is I get to really test myself in my culinary ability. This dude is a real steak-lover so steak is a must.
I'm thinking a dry-aged Porterhouse, a cut which is pretty great because it includes part of the
awesome tenderloin in it. Dry-aging adds more flavor to the steak and also tenderizes it a little. It's a lot like how aging wine in wooden barrels enhances the flavor. Anyway, I have a lot more steak-cooking tricks up my sleeve since I last saw him. For drinks, I'm thinking Cabernet Sauvignon which goes wonderfully with tenderloin and then for dessert a super-special cream cheese and fruit jam grilled cheese sandwich.

table d'hôte menu for the whole stay right now.
