Yesterday I made probably the best steak I've ever made, a nice thick juicy Choice-grade cut of Porterhouse that I marinaded for a few hours in Worcestershire sauce and soy sauce and seasoned in some ground black pepper and sea salt. The steak was seared on a hot stainless steel pan and then placed in the oven for 25 minutes at 350°. Then it came out, the inside cooked to 138°, just slightly below medium. The meat was a beautiful rosy pink. I served this wonderful steak with some gravy made with the pan drippings plus a side of fresh brown rice.
I used to eat entire T-bone steaks in one sitting if I was really hungry, but I can't do that anymore so the rest of the steak went in the fridge for later.
That brings me to lunch today. Reheating a steak is one of those things a lot of people have different solutions for but is there a best way for a steak to reheat and maintain its textural/flavor integrity? My mom used to cut leftover steak into cubes and then fry them on the skillet in oil mixed with leftover gravy. The result was sinfully greasy, the sort of grease where you feel like you have to follow it up with a lot of milk or bread or rice. Post-meal depression was pretty common. Some people nuke their steak, but the microwave always gives this sort of "off" flavor for me. You could put it in the oven, too, or in the broiler. Or you could just eat it cold.
What I did was I added a tablespoon of water to a small skillet along with some Worcestershire sauce, soy sauce and a little bit of red wine—Cabernet Sauvignon, perfect for steaks—and then heated the mixture up until it started to boil and then I turned the heat down to low and added the steak, turning the steak over once half of the liquid evaporated. Absolutely no oil involved. This reheated the steak gently enough for it to still be tender and flavorful. Then I sliced the steak into strips and drizzled gravy over it and served it with a side of brown rice. It was wonderful.
