It's breakfast time! And today we're having maybe the healthiest breakfast yet: sautéed grape tomatoes, portobello mushroom caps, scrambled eggs and toast, all washed down afterwards with a nice glass of milk. I'm starting to get the hang of Gordon Ramsay's recipe for simply super sublime scrambled eggs but the wonderful thing about his recipe is that even if you don't get it perfect, it will still taste fantastic. I substitute sour cream for crème fraîche, but I'd love to get in on that goshdarn fine piece of euro-goodness if I just could. I'm talking about cream, here, guys, not Gordon Ramsay. And I mean the crème fraîche, not some other cream.

His recipe involves beating eggs and butter with a scraper in a saucepan over low heat, occasionally removing the pan from the stove. This prevents the pan from getting too hot because hot pans make un-soft, un-fluffy scrambled eggs, which are totally undesirable. I use dried parsley flakes instead of chives like he does because I lack chives, but the end result is still so scrumptious. After discovering this wonderful recipe, I don't think I could ever go back to the old method of pouring two teaspoons of milk into a mixing bowl and adding eggs and salt and ground pepper and mixing it before frying it on a pan. That don't work no more.

It's a great start to a day, no bacon or sausages involved. Just you and your 'shrooms and your tomatoes and bread. A breakfast of champions.

(Okay, I admit I fucked up the eggs a bit. I was having trouble removing the tomatoes from a pan and some of the egg got overcooked and kind of clunky, but let's keep this a secret the between the two of us, okay? This is what I call a "delicious secret".)

I had yellow rice and two steamed hot dogs. It wasn't that much but I wasn't too hungry (I had a ton of oatmeal for breakfast )

Breakfast today is something my family almost never had for breakfast: omelet and rice. Most of the time this was something we ate for dinner or lunch and my mother would put in ground pork, green onions and a little soy sauce and fry it over a wok. We never called them omelets. This is because my mother would keep telling me that this is a super-secret clan-only recipe handed down from generation to generation to generation and with the death of my great grandmother she (my mom, that is) was like the only person in the whole wide world who knew how to make it.

Then one day a few months ago, she told me it suddenly occurred to her she's been making omelets all this time.

The omelet I made isn't quite the same as hers as this one consists of cheddar cheese and some diced yellow bell pepper. It's fried over melted butter on an omelet pan and not canola oil on a wok. Heavy cream is also added before beating to give the eggs some body. I'm really happy with heavy cream's contribution because I've seriously had this little container of it sitting in the corner of my refrigerator for a few weeks doing absolutely squat. I usually use milk but heavy cream makes the egg creamier and smoother.

Seasoning mostly consists of sea salt and black peppercorn, both of them ground over the omelet already in a heated pan. If you add sea salt before you mix it, it breaks down the egg so you want to use it after.

Yum, yum. :9 Rice goes fantastically with eggs because it is virtually flavorless but adds this cool little texture. If I ever feel like a dish isn't filling enough on its own, I usually plop a little bit of rice on the side and then it's all good. Because after all, it's all good, yo. Sofi out.

Yeah, you definitely want to cook them a bit longer. I don't actually flip my omelets, since I'm afraid I'd make a mess or something; I just fold them. And if I mess up folding and it turns into scrambles, I usually flip it over when transferring the omelet to the plate to hide it since no one will see the bottom. Hope this helps!

I'm making white rice, red kidney beans, and steamed fish fillets.

Rice:
2.5 cups of rice
2.5 cups of water
About half a cup of chicken broth
1 teaspoon of salt

Beans:
15oz of red kidney beans
15oz of water
4 tablespoons of Goya tomato sauce
2.5 tablespoons of instant mashed potatoes
1 tablespoon of Goya sofrito (garlic, onion, and tomatoes cooked in olive oil - but to make it more authentic, you'd add recao (culantro), ají dulce, cubanelle peppers, roasted red pepper, yellow onions, garlic, plum tomatoes and cilantro (coriander).)
1 teaspoon of salt
1 teaspoon of black pepper
2 hot dogs

Let's see how it turns out

My mother bought me this wonderful cut of rump steak. I've only ever worked with T-bone and rib eye, so I was of course super-excited to explore the texture and flavor of this new piece of beef. Rump steak, also sometimes called "round steak", comes from the rear of the cow where it's lean and kinda tough. You can make all sorts of wonderful dishes with it such as the London broil or an Italian beef sandwich. Although it's totally not the best way to handle it, I just fried mine on a skillet and served it with sunny side up eggs and some hash browns.

The inside of the steak was a little red but really juicy just the way I (and everyone totally should!) like it. As super-cool as it was to make this, I think I'll probably just use this sort of cut for making some nice vegetable stir-fry dish with sliced beef marinated with some yummy sauce in the future. That'd be totally awesome. In the mean time, it's back to the rib eye for this cowgirl. Like, yeehaw.

I maded some pancakes for the first time on Sunday.



I really wanted to do it from scratch, but I couldn't find several ingredients at the time so I had to wing it with 8 year expired pancake mix, milk, an egg, and cherries. Yep. First pancakes I ever make and I want cherries in it. Kinda failed since I didn't really chop them up too well with the whisker so most pancakes had very little cherries in it, while the last one I had to nickname the blood pancake. Try to find out which one!

And no, I didn't eat all those pancakes. I gave half of them to my dad, then nommed the rest. Oh God I love syrup but it makes me go into sugar comas.

Aw, sorry! It totally slipped my mind. I think it looks great. I'm not huge on beans or cut up hot dogs (hot dogs have this sort thing to them that makes me feel weird eating them with anything other than a hot dog bun), but I bet you had a blast eating it. Cute Yoshi, too. It looks like you have one of the bigger Yoshi plushes.
