So I have just been practicing with Toads Tool 64, and I have explored the forums a bit, but I still have an unanswered question thats starting to bug me. Sure, I can change a model from a butterfly into a castle tower. But mario will not collide with the tower. It is possible to make a new model collide with your character? Thanks.

Collision modifying is not in Toads Tool 64. So no.
