Sorry for the late reply, but it sounds like the video hardware is going south (though it's kind of odd that the problem surfaced after you updated the system menu ), likely due to overheating. I've seen the problem first-hand on several different Wiis, usually ones bought at or near launch, including mine. The only thing you can do is send it back to NOA for replacement. 
Console manufacturers just can't seem to make reliable hardware anymore. I think the Bluetooth module on my Wii is going out, because even in the dark, with a clear view of the Sensor Bar, and freshly-synced remotes, the cursor tracking is often erratic, and sounds coming from the speaker are crackly and truncated. Moving closer to the console helps a little, but I don't think you're supposed to have to sit two feet from it...
