If you know HTML and CSS you should be able to create your own post layout without much trouble. If not, there are layout tools (I think?) that will help you.

I try to avoid bloat. Although, with the entire source for my layout embedded into my profile, um... I'm not sure if I do these days.... but hopefully it loads fast?

You can just take a look at sigsize... the ones with are layout-maker made layouts.

It used to be a lot, lot worse.

I'd do it except I'm only good with the layout part and not so much the maker bit.

By layouts, we really mean "small HTML bits used to dress up a table cell", as opposed to what most sites out there would give you (shit for MySpace and other lame sites). Code for layouts can be easily done by yourself:
