Seeing as the kiosk demo of Mario Kart DS is considered a MKDS prototype on the wiki, I think it's safe to assume other demos are as long as they have cut content from the game of origin. I know that the Playstation magazine includes demo discs with it sometimes, and you can find these online. I saw a disclaimer in one that said because the games were not yet released they include content that may be cut. I think that these may be worth looking into as they include titles such as the original Star-wars battlefront.

I asked this a while back, demos of any sort are classified as prototypes for the purposes of the wiki. Content that's in them that isn't in the final game, or that is different, counts as valid material.

So um, yes. :p
