Last month, Matthew Callis, of SuperFamicom.org sent me a list of games he found that displayed CPU/PPU1/PPU2 information. The method to activate them were unknown to him. So, I decided to take on the task by figuring out how. This is the list he sent me with my notes added in the brackets. The ones with no note at the end, I wasn't able to find.

Test Card: Hold Select + Start on controller one while powering on the console. Press Select to toggle between displays. The only difference is the name to input in slot 10: "T&E Soft".
