Even though the new UI is still very incomplete, I can't imagine myself ever wanting to use it on anything besides a touchscreen. There's a reason that the desktop UI paradigm has lasted so long. So long as they make a way to completely disable the Metro stuff (I haven't seen an obvious one yet), I'll be happy.

Windows Explorer is now ribbonized like Office? Meh. I suppose you can always minimize the ribbon and add the icons you want to the little toolbar thing.

New task manager, too.

The iPad scale down is just because it won't fit on some screens full-size. You can disable the downscaling if you want to.

Edit: I'm looking at the simulator included with Xcode 4... so maybe the option isn't there in 3.
