Hello Luke! I'm going to answer your questions the best I can.

1. That depends on how you size the model in the importer. Basically, YOU decide and resize the model until you've got the right size.

2. Yes, adding the textures in Sketchup adds them in-game too. If it doesn't, be sure to check if there is a .MTL file in the directory of your model.

3. Super Mario 64 can handle a lot more polygons than most of the levels that already exists. You don't have to worry too much about it.
Some key rules is to not make too many circles or overlapping faces in Sketchup.

There's also a pseudo collision command which will make your texture "non-solid", to use it
just add "collisionType 80" to your material attributes.
