As a thought -- since I'm no n64 hacker, and I dunno how on earth one would extract images from an n64 rom -- have you tried poking around in the Japanese rom? It was released a good four months before the US one; maybe the palette might not be as borked, or the other beta HUD elements (like that nifty circular lifebar!) would be present. :o
