Can't decide my favorite for some systems, but for the ones I can:

SNES: Addams Family; it's probably one of the games I've put the most time into, the mechanics and level design really appeal to me
Genesis: Ristar; the mechanics and atmosphere is amazing, and I love the music
Game Boy: Bubble Ghost; I really like these types of games where you have to navigate an obstacle around a maze, and the style and music are charming
Playstation 2: Gitaroo Man, easily; I love the music and gameplay, and the challenge level is good. I spent a long time awhile back trying to get really good at the game, maybe one of my favorite games of all time
Gamecube: Tales of Symphonia - Don't like it as much as I used to at one point, but it's a charming game to go back to every once and awhile
Switch: gotta go with Celeste, has awesome platforming, and I love the story
DS: Kirby Super Star Ultra; the new content, especially metaknightmare ultra, makes it much better than the original imo
3DS: Zelda: A Link Between Worlds; don't remember this game as well as the others, but it's always fun to go back to and explore
