Aside from Planetscape Torment, there's also Daggerfall (still a lot to do though, so hold off until it's actually finished), Doom (the article for the original PC version), Harry Potter and the Sorcerer's Stone (Windows version), and S.T.A.L.K.E.R.: Shadow of Chernobyl. I'd say Space Quest VI too, but that's really incomplete at the moment. No one has bothered to mirror Akril15's findings (A lot added has been added to her site since the article was first posted, which is saying something considering I already knew about much of the game's cut content).

Not to toot my own horn, but the Daikatana Pre-Alpha, Unreal Tournament 222 prototype, and Unreal 0.83 prototype pages seem to be good enough for a feature. I documented as much as humanly possible as one person can do for each of those pages. I'm positive the Daikatana page has almost everything notable in the prototype, while the only things that need to be looked at in the Unreal prototypes are some snippets of code. They might also benefit from some technically-minded people, like Leilei, seeing if they can find anything usual about each game's renderer.
Plus, the Daikatana pre-Alpha pages have exclusive enemy, character, and prop pictures you won't see anywhere else thanks to me getting my hands on some dev maps made around the time the pre-alpha was made.
