Extreme glitch abuse.

Using a glitch, he turned the item list into a RAM editor and typed in code by moving, buying, selling, and throwing away items.

I can't wait to see someone do this on a real Gameboy...

Nah, because all you would be limited is a game's scene in the RAM, using what you can leave out of the RAM and SRAM for storing everything normally read later from ROM.
Though if you do some hackery to expand the RAM to 32K, that would give you a lot of extra space to really recreate a mostly functional part of the game.
