I have not even eaten breakfast yet. I often get lazy about meals and settle with eating many snacks in between.

That has been happening with lunch these past few days. I just don't feel inclined to go sit down and eat a large meal--Strange, I know

By the way, I am about to go eat some type of sandwich of some sort. Or a few of those left-over brownies

Breakfast

  1. Sunny Side Up Egg
    Extra large egg sautéed in butter and seasoned with freshly ground white pepper and sea salt.

  2. Breakfast Sausages
    All-natural pork breakfast sausages from Jones Dairy Farm. Lightly browned in butter.

  3. Southwest Yukon Gold Home Fries
    Tossed in safflower oil seasoned with smoked paprika, chili powder, ground cumin, ground oregano, ground cayenne pepper, sea salt and ground black pepper. Roasted in the oven at 450°F for 30 minutes.

  4. Sautéed Spinach
    Organic spinach lightly sautéed in butter.

Today's dinner comprised a burrito from Chipotle and a cup of hot steaming coffee.

Considering the fact that I have eaten considerably large meals, I am sure that if not for all the caffeine in my system, I would most assuredly be asleep

Pork Chop with Mac & Cheese
If you’ve been following my posts recently, I’ve been doing a lot of “pork chop experimentation” trying to find the way to make pork chops come out in a terrifically tender medium doneness without burning the outside to a crisp but it's always been pretty frustrating because the stove top can be pretty inconsistent.

Instead today I took a page from my steak cooking method and preheated the oven to 325°F and then after browning the chop for two minutes on each side over medium heat in my stainless steel pan lightly coated with safflower oil, I basted it with the leftover oil and transferred it to the oven for 20 minutes making sure to flip and baste again halfway through.

20 minutes later, the pork chop came out cooked exactly to 145°F. It was totally juicy and tender, just the way every good homemade pork chop should be now that the USDA has lowered their recommended temperature to something actually reasonable.

Normally I only take photos of food right after it was cooked but I wanted to show the texture of the meat.

The pork chop was seasoned with a homemade barbecue mixture consisting of chili powder, sugar, ground cumin, smoked paprika, ground cayenne pepper, sea salt and mixed peppercorns half an hour before cooking and left on the counter to come up to room temperature. It was served with leftover macaroni and cheese which was reconstituted in a saucepan with organic 2% milk and the drippings accumulated in the oven pan from the pork chop. It pretty much regained its original texture and, of course, it was delicious, too, but not really the focus. Coming up tomorrow: leftover pork chop and mac and cheese omelet!

A concoction made up of ground veal, rice and corn. You just cook the veal and toss all three together then add whatever seasoning you wish.

Simple meal. Simple but good.

Used some Shake & Bake Italian seasonings on Publix's porkchops, along with Kraft's macaroni & cheese.

The seasonings do have a kick to it.

Homemade miso soup and a cold sandwich made with brown rice bread, American cheese, roast turkey breast, some mñche rosettes (a leafy green that I’ll probably talk about in another post since I totally forgot here) and some salsa. I was trying to have a “white-collar” office-style lunch with the cold sandwich. The rice bread was really dense and I didn’t like the texture all that much but everything else was good especially the miso soup.

Miso soup is so amazing. If I ever have to pick a final meal, it’d totally have miso soup.

Ack! Black licorice?!

Speaking of which, I'm out of s'mores pop-tarts.
