I have some crimini mushrooms hanging out in my fridge so I sliced them and seasoned them with sea salt, black pepper and thyme and then sautéed them in butter. The mushrooms were served with a bowl of brown rice that I added some chicken stock to when reheating and then garnished with some parsley. It was exceptionally tasty and in the process of making it, it filled my apartment with the mushroom's wonderful earthy aroma. Mushrooms have quickly become a staple in my pantry, their meaty texture and umami-ful flavor too good to pass up. Not to mention, they're totally good for you and are full of nice proteins. I know, mushroom detractors may sneer: "It's a fungus" but that's precisely why it's so good.

Two eggs, scrambled French-style seasoned with sea salt, white pepper and chives and a side of half a Yukon Gold potato, shredded coarsely and fried as a "hash brown" until it's just perfectly nice and crispy.

The sour cream expires pretty soon so I need to make the most of it.

I use them in scrambled eggs because it gives the eggs this wonderful texture and flavor. Plus, I don't have any crème fraîche.

I love the sound of Zapiekanka. And by that I mean the idea of it. I'm totally going to try it sometime.

In the mean time, though, I enjoyed an egg-sausage-cheese English muffin sandwich. Can you say "yum"? Because I sure can.
