Comfort can really be the death of innovation and unfortunately I've learned to make some damn comforting food. At this point, breakfast is absolutely for-sure my favorite meal of the day because the process is so pleasant. Scrambling eggs, frying potatoes and sausages. There is something beautiful about the sound of bacon sizzling on a hot skillet, the sound of an egg left on the counter over night cracking open over a saucepan in the morning and believe it or not I pretty much go to bed every night with the prospect in mind of eating a wonderful breakfast in the morning. It's what gets me up and out of bed in the early hours.

Today's breakfast was scrambled eggs, sausages and hash browns. The eggs are a very, very tiny bit undercooked, but the hash browns are way overcooked and super-crispy. I'm not sure if this is a good thing but it sure is a delicious thing. The switchover to crème fraîche from sour cream for the eggs was definitely positive. The sausages were okay. They weren't browning properly on their skillet so I ended up just moving them to the hot skillet with leftover sunflower oil I used to make hash browns. I still think I should go back to using all-pork sausages for taste.

The soundtrack to today's breakfast is Modest Mouse's third album, The Moon & Antarctica, but I finished before the first song even finished playing and then I sat, staring at the table, wondering what sort of music I'd play in my very own breakfast diner.

That looks nice, Sofi. Though, I think I would prefer to cook the eggs a little bit more thoroughly ... I don't know how yours turned out but I think the consistency doesn't look okay.

I had a less appealing breakfast than Sofi ... froot loops! I must drink all this milk before it goes bad so ...

I actually have PB and jelly, but when I think of a PB sandwich, I only think of the PB ... I don't think it'd taste right with jelly, but maybe I should actually try it

Today I had frosted flakes for breakfast... I'm currently trying to decide what to have for dinner.

I made Annie's box mac and cheese again only this time I noticed the instructions changed since I last checked and decided to follow the new instructions. Instead of using three tablespoons of milk, though, I used two and also added some crème fraîche. Instead of adding nothing at all I seasoned the sauce with white pepper plus a dash of cayenne pepper and a dash of ground mustard.

The meal was quite satisfactory but of course no replacement for a homemade mac and cheese meal. I washed it all down afterward with a mixture of grape juice and tangerine juice which is surprisingly refreshing, the flavor of the citrus fruit gently complementing the much stronger grape flavor. Tangerine juice by itself is good but unfortunately too mild for me to indulge in my fondness for diluting fruit juices with flavored seltzer water.

Dinner was fried rice with two fried eggs. I soaked that rice in soy sauce as if I wanted to die of high blood pressure. Yum

Scrambled eggs, hash browns, sausages, grape tomatoes and a nice cold glass of 2% milk.

Lately breakfast almost every morning seems to consist of scrambled eggs, sausages and hash browns and I think it's because at this point the tastes and textures are just so seemingly perfect that eating anything else which I haven't yet perfected seems like a step down. The hash browns are just so crispy and good, the eggs just so smooth and fluffy, both offering this delicate balance of saltiness and umami between them.

Dear Scrambled Eggs,

      I know you told me not to but this morning I spent breakfast with two shirred eggs instead of you. The usual gang—the hash brown and the sausages—were there but I told them not to tell you. Tangerine juice was there, too, but you hardly know him.

      Anyway, as I was eating the shirred eggs, I couldn't help but think of you, the way you were all soft and fluffy and slightly creamy from the crème fraîche. The shirred eggs weren't anything like this. They just sat lazily in their little ramekins full of whole wheat toast and chopped up sausage right out of the 350°F oven. They expected me to do all the work. The whole meal was mostly tasteless unless I sprinkled salt over all of it and as fun as it was to see it, the way bread and egg took a muffin shape in the ramekin was kind of gross, too. And the texture sucked. It made me really miss you and suddenly I felt really bad for straying from you like this.

      And then I realized this is pretty much all my fault. The reason this happened was I was just insecure with my reputation as a cook. I just wanted to seem creative or different, not the sort of person who'd just make the same scrambled-egg-sausage-hash-brown breakfast everyday. So I made shirred eggs instead and ended up feeling pretty terrible.

      I hope you can forgive me. I promise I'll just go back to eating you, just like before.
