I'll throw a few out that I've got on here:
Hilary Hahn Plays Bach - A lot of people probably don't know who she is...but hell of a gifted violinist at the age that she did this. She was also part in part with M. Night's The Village in terms of violin pieces that were submitted in it...which I actually got a shock as to it being as such because I had been listening to it shortly beforehand and noticed that in the credits. Went 'oh wow...' when I saw it. Specific track to think about...hmm...probably Gavotte en Rondeau. Easily one of the better ones out of Partita No. 3 in E Major. Might not be a handful in rock...but I thought it was pretty good.
Maksim Mrivca (The Piano Player) - Also another good one. Decent take on Chopin's Revolutionary Etude in C minor from this. A lot of people that are big in the dance community will recognize it as KAKUMEI from DDR MAX 2. A little more beat here.
Beethoven's Moonlight Sonota...all 3 movements - If you don't have this already or haven't listened to it, I don't see why you shouldn't. Good 15-minute exercise in how a piano is used.
Yngwie Malmsteem (Trilogy Suite Op. 5) - Seven minute high-speed guitar solo boasting classical music. It's Yngwie, so expect fast. He's pretty good all around but not necessarily on the classic scene. Not violin or piano that you were looking for but eh...
