Bah, 'course I'm late to the suggestion party.

I would've suggested my personal favorite of a Subway Club on Honey Oat with lite mayo, honey mustard, spinach, pickles, green peppers, banana peppers, and jalapeno peppers.

Absolutely no onions either.

Friend of mine who worked at Subway actually made a Pizza out of the Subway ingredients back in the day. Smashed the dough into a crust, the marinara sauce for sauce, with cheese and pepperonis... It was fucking amazing.

As for cucumbers - I find they overwhelm the taste of the sandwich. Cucumbers alone are tasty with some salt sprinkled on 'em, though.
