I might consider "down" to be the direction of my feet. "Falling" might have no meaning if gravity isn't pulling the falling object anywhere well-defined in particular.
I'd probably have a hard time imagining it though. Most spaceships I'm familiar with are from science-fiction, which is filmed on Earth, which has gravity

Well, if there were gravity to work with at one point, you'd likely just fall off and keep going if you had enough momentum.

You can't 'fall' without gravity so there wouldn't even be a verb for 'to fall'. You can descend, though...  |

Technically there is gravity. Gravity just means attraction between any 2 bodies of mass. It's just that in space the effect is extremely weak relative to on Earth and doesn't overwhelmingly pull you in 1 direction only.

I was really defining gravity as something that has definite pull and not a minimal amount of attraction.

There is always gravity, if you consider all of the physics that we know. If you take gravity completely out of the equation and you're floating by yourself with said platform, you or the platform would either create gravity or if that was impossible, decay at the rate of half-life in non-exponential decay which is as follows:
N_t = N_0 \left(\frac {1}{2}\right)^{t/t_{1/2}}
Nt = N0e − t / τ
Nt = N0e − λt
Or in layman's terms, you would decay at a rate in which you shed half your mass per each half-life that has elapsed. This is, of course, a hypotheses as there is no way in knowing without an actual test and it's impossible because a fraction of gravity will always exist, at least in our reality.

I would pick a direction and just consider that up or down in such a situation, I suppose. There would still be friction with air and at least a little gravity from the platform, unless we came up with some method to manipulate gravity as we please.

I'd define falling succesfully being pulled into something becouse of the gravity there is with whatever it's falling, so you can't fall if there's no gravity.
This is regardless of all "you wouldn't be in place if there was no gravity" becouse for the example I am an undivisible unit of existence.

| Assuming that, for some reason, there's nothing else (this includes all matter) perceivable anywhere besides you and the platform, I would say that falling would simply be any movement in which you aren't on the platform, no matter which direction you are moving in or if you're going feet first or head first; however, it would be impossible to tell whether you're moving or the platform is moving without a good third reference point, so this definition (along with pretty much every other one in this situation) is pretty much useless. |

Wait, you could fall on the platform. As in, if you jump you will eventually be dragged back into it. You don't fall when you are on the platform becouse you are already at the point falling drags you to.
Getting away from the platform forever would be flying.
