I've found a few places that do vegan mac and cheese so I can have it occasionally now. It's nice.

thats what i'd call a pretty common, like, "poverty meal" here in the US too
i know i definitely at least ate a lot of it in my childhood. not bad if you spice it up a little

also, update to my last post here: i did manage to make a baked white cheddar mac and cheese around christmas, actually!
...from a boxed recipe. but still! i added stuff like extra bread crumbs and some sprinkled on mozzarella and seasonings.
turned out pretty damn good!

i just eat default kraft out the box how it says. and no funky shapes or anything; that makes it taste weird

i actually like beyond meat better than actual meat. i don't even mean this in some `vegetarian' way. it somehow tastes more savoury and fulfilling

i made mushroom mac and cheese the other day, it was pretty good

Huh, somehow I never thought to use mushrooms. I think I will now.

At some point with all these added elements, the mac and cheese is going to just become an ingredient in a larger dish and we'll have to come up with a name for it...

Haven't been able to make that work for myself due to sodium content in comparison to raw (about 4x as much). I gotta watch that (getting old sucks). I have had it a few times and it isn't bad, though.
