Main reasoning for the lack of space on those Chromebooks is that they were designed to be online-only in the respect that everything you would save would be saved to Google drive in some capacity and never on the actual drive itself. Worse is that they tend to use eMMC for storage so if you ever nuke the storage, you're looking at a motherboard replacement since that storage is soldered in.

I take care of about four or five schools locally just changing out parts in them all the time with used 'just about anything' save for motherboards themselves. I've got a giant stack of parts for CB 11's from the gen 4 all the way up to 8. They're very popular for school use due to their cost but they don't go very far for their longevity, especially against a bunch of kids.

Off to the recycler's in about 11 years, or however long until HTML6 comes out and suddenly they can no longer access YouTube or the Google Suite (despite neither video nor office suites fundamentally changing in the last 20 years), gotta get that money's worth out of it. Just ignore the superintendent scraping every penny off the top of the entire district's budget -- staff and teachers included.
When I was moving to a new school in the 8th grade around 2015, I saw a pile of Dell Latitude D610s (I think) being sent off for recycling. I say I think because when I so much as looked at them, a staff member shouted at me that they weren't mine.
