Far be it for me to say, because I'm not really into Minecraft, but since we're all adults with things to do, maybe just running the server at scheduled times might be interesting. It would 1: save on costs, and 2: Make it more likely that someone else was playing when you were.

Make it less of a minecraft server and more of a Jul game night type thing. idk

yep that's exactly what we did! dunno when I'll run the next weekend but I'd like to put the break for at least 2 months. of course people are free to organize other stuff with other games,, this is just my thing now and I dictate it!

I'll be honest, I would love to see this happen again or something. I tried out classicube and it's a pretty neat program.
