a few months ago, i couldn't conceive of sandwiches as anything beyond cheese and bread and sometimes an egg. i mean, of course i had burgers and sandwiches in restaurants but that just wasn't at home.

then i started eating them at home. first it was just bread, cheese and tomatoes (vegetarian). but slowly, surely, they evolved. i started trying different breads. i added spreads. now my current breakfast sandwich is, from bottom-up:
  1. bread
  2. cheese spread 1
  3. chives
  4. tomatoes
  5. cucumber
  6. cheese
  7. capers
  8. cheese spread 2 (sambal)
  9. bread

this is such a complex set of flavours and textures but it's quite satisfying.

and one morning as i sat and munched on this creation, i reflected on how at Subway, they refer to the people who make sandwiches as 'sandwich artists.' i truly felt like an artist. i've come to appreciate the art of the sandwich. now i want to make all sorts of different kinds of sandwiches. the possibilities and textures excitement. so much awaits.

but what about you? do you appreciate sandwiches? what do you put in yours?

Due to my cheap budget and complete burnout, I tend to keep it very easy. Usually hummus on wheat bread (or if I can get my hands on it, tomato basil bread from work) with some nice, sharp swiss cheese. If I have it, I love slicing up an avocado and putting that in as well because I'm totally gaga for avocado.

I'll also do PB&J, tuna, or egg salad as well, keeping it simple. Tuna sandwiches always get lemon juice, and my egg salad has nothing more than eggs, fat free mayo, and sea salt.

If I have the energy, I love doing deli meat sandwiches with lots of pickles. Spinach and avocado for me always.

A few days ago I made a sandwich of labne and feta on Greek pita.

I used too much feta so it was very dry.

Still tasted pretty good though.

yoooo sandwiches are so good and so underrated.
people just go out and eat subway and get turkey and cheese or whatever
and not that theres anything wrong with turkey and cheese but
man you have no earthly idea what youre missing

theres just so much good shit you can put on sandwiches
so many good types of meat, throw some crispy lettuce on there for crunch,
different kinds of mayo and cheese, and sauces and just. got damn
so good.

thank you so much. with the reaction i got in this thread i thought maybe i was an outlier or i said something wrong. but now i know my passion for sandwiches is valid. there is something harmonious and symphonic to a good sandwich.

I'm not sure of anyone I know that doesn't appreciate them on some level, but I do agree there are a billion great kinds of sandwich. I still need to find a place that does a proper banh mi here. This stuff with a lot of anchovies is actually kind of stellar, also. Another thing I tried making that was good here...

I used to make more sandwiches, but because we eat what the toddler eats (and the toddler mostly disintegrates sandwiches right now), I don't have them often.

I like to do a turkey, camembert (or brie), baby spinach, and walnut one, sometimes with a small amount of cranberry sauce.

For the toddler, we make a bunch of chicken and celery ones, where you cut up cooked chicken and celery quite fine and mix it together with kewpie mayonnaise, salt, pepper, and chives. That seems to withstand SOME toddler rough handling, but usually gets everywhere. Similarly, and a good one when you've just got pantry staples, is a tuna and sweetcorn one, very similar kind of method (plenty of kewpie to keep it together), also stands up to some "deconstruction" by curious hands.

Actually most of the toddler ones seem to use kewpie or peanut butter or something as "glue" to try to hold them together. Like the banana, ricotta, and honey one, which uses ricotta as glue. That one is a touch sweet for me though.

I make myself fairly hearty sandwiches as work lunches most of the time. My go to sandwich is this:

Wholemeal, multigrain or dark rye bread
Hummus
Garlic mettwurst
Baby spinach
Lactose free cheddar
Kalamata olives (sliced)
Sun-dried tomato

It's great and filling.

The other thing is if I have a particularly nice breadroll and I'm feeling nostalgic about childhood I'll make a double cut roll. They're for the extra hungry days.
